Rolled zuchinni ribbons with herbed goat cheese, mint, and arugula.
Caprese: Tomato, mozzarella, basil, salt, pepper, olive oil Avacado, grapefruit, and arugula salad
Main Dish
Asian Marinated Tofu with soba noodles
Dessert
Crostata
Passion fruit trifle with strawberries and mascarpone ( we used heavy cream instead due to lack of mascarpone )
Everything tasted great, and my #1 favorite was the marinated tofu. The trifle was pretty darn good as well…So since this class ended up being so enjoyable, my mom and I will be getting a little adventurous and attend the next ‘cooking class’…only we won’t really be cooking because it will be a raw foods class. I don’t have much experience with raw foods so I am definitely looking forward to learning more about it!
A few other reasons for my good mood this morning…well as you might know Fridays are usually my least favorite day of the week because of a certain class that up until today involved what seemed to be Richard Simmons impersonation lessons. To my relief the Aerobics part of the class is over and today we get to move on to spinning. Finally, something I am looking forward to…oh and another good mood factor that I almost forgot about. Next week is SPRING BREAK! There won’t be any crazy nights, hangovers, or travels to Mexico for this old lady though. My idea of a good time is running, relaxing, and cooking.

ReplyDeleteI loved the class and can only dream of having a kitchen like Newcastle Produce with every product you need at your fingertips. You can cook as much as your heart desires as we have to make use of your talents while you are here. The thought of you being gone in a few months, maybe even forever, breaks my heart. We are too close, but I have to follow the direction God wants for you, I'm trusting Him. Love you!
